Unique wine - first Georgian "bio-Saperavi" has an interesting history... In 1999, Givi Nikolashvili bought 6 ha of land in Gurjaani, in place of his ancestors called "Tsiplebi" that is located on the right bank of the river Alazani. To plan a vineyard, he invited Guram Javakhishvili, an experienced agriculturist. As for vine, he chose Saperavi being one of the ancient varieties of vine... In 1925, nearly in this same place his grandfather Ilia Nikolashvili (1890-1965) cleared one-hectare area from shrubs by saw, pick and spade with help of his family members and cultivated splendid Saperavi there. He used traditional methods of viticulture that are equal to modern world bio-farming high standards. Ilia Nikolashvili used traditional methods to make best wine in qvevris and barrels. City wine-merchants arrived to buy his wine with pleasure... But in 1930, "collectivization" took place and well-cared vineyards were given to Collective. Illia was given the poorest land plot. However, wine maker did not surrender and with help of his son cultivated a vineyard afresh... Irakli Nikolashvili (1917-1996) combined agriculturist profession to the knowledge obtained from father. His vineyard was considered to be the best in Gurjaani by its quality and fruit-bearing. His son Givi Nikolashvili, uses Irakli's winery where there are several old qvevris having marks (since olden times, mark was a visit card and quality guarantee that acted as identifier of producer). Irakli Nikolashvili put particular love towards vine in hearts of his children and grandchildren. Perhaps, this love was similar to what our ancestors said about the vine: "o, vine, brought up like son"... Givi Nikolashvili (1955/25/07) founded a "Club of Drinkers of Natural Wine" yet in 1996. This was first attempt to make family wine production wider as promotion of natural wine. In 2004, Givi Nikolashvili became a member of the Biological Farming Association "Elkana". After this, the Nikolashvili family began processing grapes in accordance with bio-standards accepted in Europe. Per standards of "Caucascert", obtaining of bio-certificate requires three years. In 2005, Givi Nikolashvili registered his vineyard. In 2008, for the first time in Georgia a bio-certificate was issued to the vineyard and its crop.
